Blue Zones hold cooking demonstration at farmers' market

OSKALOOSA — Two local chefs gave a cooking demonstration at the Oskaloosa Farmers’ Market Tuesday afternoon to show just what you can do with produce you buy there.

Renee Edgar and Michael Glesener set up a portable kitchen on the east side of the city square in front of the farmers’ market to demonstrate two recipes. The cooking demonstration was an Oskaloosa Blue Zones activity and about 40 people dropped by to watch.

Edgar made zucchini boats and Glesener made ratatouille.

“Ninety percent of the produce came from the vendors here at the Farmers’ Market,” Blue Zones Engagement Lead Miranda Cummings said. “We support buying local.”

Edgar kicked off the demonstration by making zucchini boats at 4 p.m.

She said it takes about 20 minutes to bake the zucchini boats at 400 degrees.

Making the recipe is a family affair.

“My two kids are in charge of scrapping out the middle” of the zucchini, Edgar said. “The kids enjoy making them. It’s pretty simple.”

Edgar’s recipe used zucchini, olive oil and parmesan cheese. People also can include sliced cherry tomatoes and basil.

Glesener followed with his ratatouille recipe.

Glesener used zucchini, eggplant, green pepper, onion, garlic, diced tomatoes, fresh parsley, Herbs de Provence, olive oil, and salt and pepper. After sauteing the vegetables, he let the recipe simmer for 20 to 30 minutes before serving.

In all, the demonstration took about an hour and there were free samples for the audience to try, Cummings said.

Cummings said there will be more cooking demonstrations at the farmers’ market.

“This is the first of many,” she said.

Cummings said people could get copies of the recipes at the demonstration or go to the Blue Zones blog on the Blue Zones website.
